Tips for chicken thigh recipes

  • If you’re going for flavor, we do recommend you buy bone-in and skin-on chicken thighs. The skin locks in the moisture and we find bone-in chicken thighs just taste more flavorful. It’s also cheaper compared to buying boneless, skinless chicken thighs.
  • When a recipe does not call for anything specific regarding seasoning, season your chicken thighs with a lot of herbs and spices. Countjust under 1 teaspoon of combined spices per chicken thigh. Spices and herbs like garlic powder, onion powder, paprika, and Italian seasoning are a good start and are guaranteed to bring up the best flavors when cooking chicken thighs, especially when it’s in the oven!
  • When cooking chicken thighs on the stovetop, bring your chicken thighs to room temperature before throwing them in the pan. The meat will cook evenly and will not likely stick to the pan.
  • If you don’t eat all at once, you can store chicken thighs leftovers in an airtight container and keep them in the refrigerator for up to 4 days. You can also keep cooked chicken thighs in the freezer for up to 3 months.

What are the different methods to cook chicken thighs quickly?

  • Baked chicken thighs: Preheat the oven to 400ºF (200ºC). Place the chicken thighs in a baking dish and season with salt, pepper, garlic powder, and spices of your choice. Bake for 30-40 minutes, or until the chicken is cooked through and the juices run clear. The cooking time is slightly shorter if you cook boneless chicken thighs.
  • Grilled chicken thighs: Preheat the grill to medium-high heat. Place the chicken thighs on the grill, season with salt and pepper, and cook for 4-5 minutes per side, or until the chicken is cooked through and the juices run clear.
  • Pan-seared chicken thighs: Heat a large skillet over medium-high heat. Add a tablespoon of oil to the pan and place the chicken thighs in the pan. Sear for 4-5 minutes per side, or until the chicken is cooked through and the juices run clear.
  • Pressure Cooker chicken thighs: Place the chicken thighs in the pressure cooker with 1 cup of chicken broth. Cook on high pressure for 8-10 minutes and allow the pressure to release naturally.

FAQs

Is 30 minutes long enough to cook chicken thighs? ›

Baking Temperature and Timing

While chicken thighs only need to be cooked to an internal temperature of 165 degrees as read by a meat thermometer, I recommend you bake them until they reach 180 – 190 degrees. This takes 30-40 minutes at 400 degrees.

How to make chicken thighs taste better? ›

Spices like smoked paprika, cumin, coriander, cayenne, and thyme will make the most flavorful spice rub for your chicken, so make sure to always have your pantry stocked with some spices. Preheat a cast iron or non-stick pan over medium-high heat for 2 minutes with 1 tablespoon of oil.

What to cook chicken thighs too? ›

Are chicken thighs done at 165? While chicken leg and thigh meat are still safe at 165 degrees F, it is recommended to cook it to an internal temperature of about 170-175 degrees F to improve the flavor and tenderness.

Should I bake chicken thighs covered or uncovered? ›

It depends on the cooking method. If you're frying it leave the pan uncovered. If you're roasting it, I like to cover it for the first 45 minutes, then uncover it and let it brown until completely done. I have a recipe where the chicken is baked on top of rice and liquid, I cover it for the whole cooking time.

Is it better to cook chicken thighs fast or slow? ›

The key is to cook them slowly.

Gentle techniques—such as braising at a relatively low heat and grilling over an indirect fire—work best. The goal is to keep the meat at an internal temp between 140 and 195 degrees—the collagen-breakdown sweet spot—for as long as possible.

What tenderizes chicken thighs? ›

Restaurants use marinades made from a combination of acidic ingredients (such as vinegar, citrus juice, or yogurt) and flavorful herbs and spices. The acid in the marinade helps to break down the proteins in the chicken, making it more tender. Put it in a double boiler and steam it.

What is the fastest way to add flavor to chicken? ›

Marinating is good for flavouring and tenderising your chicken at the same time. It's best to marinate your chicken overnight to give the flavours plenty of time to infuse. A faster way to add flavour is to simply brine your chicken in salty water prior to cooking.

Can chicken thighs be a little pink? ›

Safely cooked poultry can vary in color from white to pink to tan. All poultry should reach a safe minimum internal temperature of 165 °F (73.9°C) as measured with a food thermometer. For whole poultry, check the internal temperature in the innermost part of the thigh and wing and the thickest part of the breast.

Should you flip chicken thighs halfway through cooking? ›

If using skin-on chicken thighs, it's best to start them skin-side down on the baking sheet, then flip halfway through to get crispy, golden skin.

Why do chefs prefer chicken thighs? ›

While the breast is very low in fat, chicken thighs are higher in fat, and in cooking, fat equals flavor. It also means the thighs are more tender and less likely to dry out than chicken breasts—in other words, they are very easy to cook and very difficult to ruin.

Is it better to cook chicken thighs in the oven or on the stove? ›

All three types of chicken thighs cook well in an oven. Boneless chicken thighs are the quickest-cooking option, and roasting skin-on thighs in an oven can yield a crispy surface even without the chicken skin. Thanks to the even heat of an oven, the bone-in variety can also cook evenly. 1.

How do chefs get chicken so tender? ›

It is very important to marinate chicken whenever you plan to cook with high, direct heat such as grilling or pan searing, as these techniques tend to dry out the meat as it cooks. A marinade is an acidic solution that gets a head start on breaking down the structure of a protein before it is cooked.

How do you cook chicken thighs so they don't dry out? ›

  1. Preheat your oven to 425°F (218°C).
  2. Place the chicken thighs in a baking dish or sheet pan, and drizzle with olive oil.
  3. In a small bowl, mix together the garlic powder, onion powder, thyme, oregano, salt, and pepper.
  4. Sprinkle the spice mixture over the chicken, rubbing it into both sides of the thighs.

How long does it take to fully cook chicken thighs? ›

In an oven preheated to 375 degrees F, chicken thighs should be fully cooked after about half an hour. You'll know they're done when an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 165 degrees F.

Is 30 minutes at 400 enough for chicken? ›

Line a large baking sheet with parchment paper to prevent sticking and place your prepared chicken breasts on top. Timing is key. At 400 degrees F, I find that my chicken breasts are done between 20 and 30 minutes. It really depends on how thick and large your chicken breasts are.

Is 35 minutes enough to cook chicken? ›

I use a digital probe thermometer to monitor the internal temperature of the meat, rather than let it cook for a specific time, but it usually takes around 35-45 minutes to bake. I pull the breasts out when they get to 160, and the internal temperature will keep rising to about 170 while they rest before serving.

How many minutes per chicken thigh? ›

The USDA guidelines lists approximate cooking times of 40 to 50 minutes for 4-to-8-ounce chicken thighs roasted at 350 degrees. In our basic meal prep boneless chicken thighs recipe, they take about 25 to 30 minutes baked at 425 degrees F.
