FAQs

Do you use milk or water brownie? ›

Most brownie mixes call for water. While water does the job, you can add some extra flavor and moisture by mixing some of that water with something richer, like milk. If you want to swap it out completely, be prepared for a more chewy and fudge-like brownie from the extra fat.

Why does my brownie crumble? ›

Various causes include overbaking, underbaking, cutting the brownies too quickly, and lacking oil and fluid contents in the recipe. Underbaked and overbaked brownies turn out to be crumbly. When cut sooner before cooling down can make the brownies crumb.

Are brownies better with butter or oil? ›

In brownies, both butter and oil will offer a moist, tender texture, but only butter will give the dish the aeration needed for rising brownies well. If you use a cake brownie, butter is a better option because it helps rise the batter. For denser, fudge type brownies, oil is permissable.

What happens to brownies if you use milk instead of water? ›

One change is to use milk or heavy cream instead of water. This change will make brownies more moist and gooey since milk is more fatty and flavorful than water. A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter.

How liquid should brownie batter be? ›

The ideal consistency of brownie mix is thick and gooey, similar to a thick cake batter. When you mix the ingredients together, the batter should be smooth and free of lumps, with a slightly sticky texture. This consistency is important for achieving moist and fudgy brownies that are rich in flavor.

Can you use just water for brownie mix? ›

Water: Whisking water into the brownie mix will give you that beautiful glossy batter. You can also opt to use milk in place of the water if you desire, but we find that it doesn't make too much of a difference with this recipe.

Why is milk so good with brownies? ›

Milk calms down the intense sweetness from the chocolate, according to Harting, and the emulsifiers “help to smooth out the chocolate as you're eating it,” giving you the perfect creaminess-to-cookie flavor ratio.

Are brownies supposed to be liquid? ›

If the brownies still look wet or aren't pulling away, they aren't done. Even fudgy brownies will pull from the edges once they've finished baking. You'll see that the edges look dry while the middle still looks soft or slightly wet. Chewy and cakey brownies will have dry edges with firmer-looking centers.
