Quick, easy keto turkey gravy to complete your roast. This rich low carb gravy has a great flavor and is the perfect addition to any roast dinner or holiday meal and is gluten free too.

The great thing about this low carb gravy is that it's quick to make too. We used the turkey drippings for extra flavour but it can be made without. This keto gravy recipe is also used for the sauce in our Turkey Pot Pie recipe. A great use of left over Thanksgiving turkey and gravy!

The Chief taster did not used to be a fan of gravy, but this recipe changed his mind and now he requests it. I think it's the addition of the butter.

Is Gravy Keto?

Most ingredients in traditional gravy are low carb but the ingredient that often isn't is the thickening. Flour and cornstarch are often used to thicken a meat gravy making it non keto and too high in carbohydrates.

The easiest way to make a gravy low carb is to use a low carb thickener. In this recipe we used xanthan gum. You can omit it though. I made a batch of turkey gravy last weekend and forgot the xanthan gum but added cream instead. There were no complaints from the Chief Taster about the gravy which is my benchmark!

You only need a small amount of xanthan gum to thicken this gravy. We take a small amount of the gravy and add it to the xanthan gum to made a paste. Then it is added to the gravy. This prevents any lumps.

We have called the left over turkey juices turkey drippings. The phrasing of this may vary from country but it's the bits and juices at the bottom of the roasting pan. This will vary depending upon your method of roasting the bird.

How to Make Keto Gravy

For ease of less pans in the kitchen whilst making a holiday or roast dinner, this turkey gravy recipe can be made in the roasting pan that the turkey is cooked in. Once the turkey has been removed and is resting prior to carving, place the baking tray on the hob.

Mix the xanthan gum with a spoonful or two of the gravy into a paste

Add the mixture to the gravy and simmer until thickened.

Other keto sauce thickeners that can be used are almond flour or coconut flour but personally I don't care for the taste and the texture seems a bit off. But that's probably my fussy side coming out. If you were looking to use a low carb flour for a gravy thickener in place of xanthan gum I would lean to oat fiber. It has a lot less stronger flavour than almond or coconut flour and mimics regular flour well.

This low carb gravy recipe is not just for turkey! It can be used for chicken or any other roasted meat. Use the meat drippings, add the stock, flavours and thickener and voila!

Make sure that you taste test the gravy as the flavour of the turkey drippings will vary depending on how you have seasoned your roasted turkey.

As the gravy cools, it may thicken more. If it's too thick for your tastes add more chicken stock.

For a creamier gravy add heavy cream or cream cheese.

Ingredients

  • 1 cup turkey drippings
  • 2 cups chicken stock
  • 2 tablespoons butter
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon xanthan gum

Instructions

  • Either place the turkey roasting pan (without the turkey) with the turkey drippings on the hob or pour the turkey drippings into a medium saucepan on a medium heat.

  • Add all the ingredients apart from the xanthan gum, bring to the boil and simmer for 5 minutes.

  • Place the xanthan gum in a small bowl and add a tablespoon of the gravy to the powder. Mix into a paste, adding any more gravy if required.

  • Slowly and gradually whisk the mixture into the gravy a little at a time, stirring until it begins to thicken.

  • Taste and season for your own taste buds.

  • Serve, pour and enjoy!

Makes 8 servings at about ¼ cup per serving.

The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
